150 g unsalted butter at room temperature
14 tbsp SteviaSweet Granulated
2 tsp vanilla sugar
2 eggs
100 g oatmeal
175 g white flour
50 g ground pistachios
150 g dried blueberries


Makes 12 pieces

Preheat oven to 190°C. Line two baking trays with greaseproof paper. Beat the butter, SteviaSweet Granulated and vanilla sugar until light and fluffy. Add the room temperature eggs one by one, mixing vigorously. Combine the dry ingredients and add into the mixture. Divide into twelve equal portions, place on baking trays and press until a little flatter. Bake for 20 minutes or until the biscuits are golden brown. Leave to cool on a wire rack. Tip: Replace dried blueberries with other berries or raisins.
