Swiss roll with matcha and strawberries

4 eggs
14 g SteviaSweet Granulated
75 ml potato starch
45 g wheat flour
1 tsp baking powder
2 tsp matcha tea powder

Ingredients for the filling

150 ml cream
200 g curd
3 tbsp SteviaSweet Granulated
200 g sliced strawberries

Preheat the oven to 200 ºC.

Whisk the eggs and SteviaSweet Granulated together. Mix the dry ingredients together and sieve into the mixture, mixing carefully. Put the batter on a baking tray covered with baking paper and bake for 8-10 minutes. Flip the cake on a sheet of baking paper and peel off the paper you used for baking. Leave to cool down for a few minutes.
Whisk the cream. Add the quark, SteviaSweet and strawberry slices. Spread the filling on the cooled cake and roll up using the baking paper. Leave the roll to set in the refrigerator for at least an hour before serving.
